Ingredients:

  • 1 1/2 cups bread flour
  • 1 teaspoon sugar
  • 1/2 teaspoon instant or rapid-rise yeast
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1/2 cup water
  • 1 can (28 ounces) whole peeled tomatoes
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 8 ounces low-moisture mozzarella cheese, shredded (2 cups)
  • 2 tablespoons grated Parmesan cheese

Instructions:

  1. In a large bowl, whisk together bread flour, sugar, yeast, and salt. Add olive oil and water and stir until a shaggy dough forms.
  2. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Cover with plastic wrap and let rest for 10 minutes.
  3. Meanwhile, make the tomato sauce. Pulse whole peeled tomatoes (with juice) in a food processor until coarsely ground. Heat extra-virgin olive oil in a medium saucepan over medium heat. Add oregano, red pepper flakes, and garlic and cook until fragrant, about 30 seconds. Add tomatoes and salt and bring to a simmer. Cook, stirring occasionally, until sauce is thickened, about 15 minutes.
  4. Adjust oven rack to lowest position and heat oven to 450 degrees F. Roll dough into a 15-inch circle on a sheet of parchment paper. Transfer to a baking sheet. Spread sauce over dough, leaving a 1/2-inch border. Sprinkle with mozzarella and Parmesan.
  5. Bake until crust is golden brown and cheese is melted and bubbly, about 15-20 minutes. Let cool for 5 minutes before slicing.
